Ingredients (4 servings ke liye)
- 500g sarson ke patte (mustard leaves)
- 250g palak (spinach)
- 100g bathua (optional)
- 4-5 tbsp Sahya Kachi Ghani Sarson Tel
- 1 medium pyaz, katta hua
- 4-5 lahsun ki kaliyan
- 1 inch adrak
- 2 hari mirch
- 2 tbsp makki ka atta
- Namak, haldi, lal mirch swad anusar
Method
- Sarson ke patte, palak aur bathua ko acchi tarah dho lein. Mota-mota kaat lein.
- Ek bade bartan mein paani ubaal lein aur sabzi dalein. 20-25 minute pakayein. Thanda kar ke blend karein.
- Kadhai mein 3 tbsp sarson tel garam karein — dhuan nikalne do (smoke point tak garam karna zaruri hai sarson tel ke taste ke liye).
- Pyaz bhoonyein sone tak. Adrak-lahsun-mirch paste dalein.
- Blended saag dalein. Makki atta dalein. Namak aur masala dalein.
- Dheemi aag par 15-20 minute pakayein, beech beech mein hilaate rahein.
- Serve karte waqt upar se 1 tbsp sarson tel aur makhhan dalein.
Chef Tip: Asli Punjabi sarson ka saag ka taste tabhi aata hai jab kachi ghani sarson tel use karein. Refined oil ya dusre oils se wo authentic teekhapan nahi aata.
