Method

  1. Sarson ke patte, palak aur bathua ko acchi tarah dho lein. Mota-mota kaat lein.
  2. Ek bade bartan mein paani ubaal lein aur sabzi dalein. 20-25 minute pakayein. Thanda kar ke blend karein.
  3. Kadhai mein 3 tbsp sarson tel garam karein — dhuan nikalne do (smoke point tak garam karna zaruri hai sarson tel ke taste ke liye).
  4. Pyaz bhoonyein sone tak. Adrak-lahsun-mirch paste dalein.
  5. Blended saag dalein. Makki atta dalein. Namak aur masala dalein.
  6. Dheemi aag par 15-20 minute pakayein, beech beech mein hilaate rahein.
  7. Serve karte waqt upar se 1 tbsp sarson tel aur makhhan dalein.
Chef Tip: Asli Punjabi sarson ka saag ka taste tabhi aata hai jab kachi ghani sarson tel use karein. Refined oil ya dusre oils se wo authentic teekhapan nahi aata.
