Dhaba Style Daal Tadka Recipe
Ingredients
- 1 cup masoor daal ya toor daal
- 3-4 tbsp Sahya Kachi Ghani Sarson Tel
- 1 pyaz, 2 tomato, 4-5 lahsun ki kaliyan
- 1 tsp jeera, 1/2 tsp rai (mustard seeds)
- 1-2 sukhi lal mirch
- Haldi, namak, garam masala, kasuri methi
Method
Daal: Daal ko pressure cooker mein 3 seeti tak pakayein. Consistency thick rakhein.
Main: Kadhai mein sarson tel medium flame par garam karein. Jeera, rai, sukhi mirch dalein — chatkare aaein. Pyaz golden karein. Lahsun, tamatar, masale pakayein 10 min.
Mix: Daal iss masale mein dalein. 5-7 min medium flame par pakayein. Kasuri methi crush karein aur upar se dalein.
Tadka Finish: Ek separate small kadhai mein 1 tbsp sarson tel garam karein. Hing + dry mirch + lahsun chips. Smoking tadka daal ke upar dalein — cover kar dein 2 min.
Pro Tip: Ye last wala "tadka on top" step bilkul mat chhodhein — ye hi daal ko dhaba-style banaata hai. Sarson tel ka smoking tadka daal ko ek dimension aur deta hai.
