Kolkata Style Chicken Biryani — Sarson Tel Mein
Ingredients (4 servings)
- 500g chicken
- 3 cups basmati rice (soaked 30 min)
- 4 tbsp Sahya Kachi Ghani Sarson Tel
- 2 medium pyaz — thinly sliced
- 2 tomatoes
- Biryani masala, garam masala, haldi, mirch
- 1 cup dahi (curd)
- Aathe, bay leaves, cardamom, cloves
- Saffron (kesar) + warm milk
- Kewra water (optional)
Method
Step 1 — Sear: Kadhai mein sarson tel ko smoke point tak garam karein. Pyaz brown karein. Chicken dalein, seal karein. Masale dalein.
Step 2 — Marinate flavor: Dahi, tomatoes dalein. Medium flame par 15 min pakain.
Step 3 — Layer: Bade bartan mein half rice → chicken → remaining rice. Saffron milk dalein. Sarson tel 1 tbsp upar se dalein.
Step 4 — Dum: Dhak kar dheemi aag par 25-30 min (dum method). Served with raita.
Pro Tip: Sarson tel se fried pyaz (barista) biryani ke liye best hai. Crispy, golden pyaz biryani ki shaan hai — aur sarson tel mein fry karne se ek special caramelized taste aata hai.
